The surprise is that these mashed "potatoes" are made with cauliflower!

1 medium cauliflower (about a 2 pound head)
1/4 C margarine, lowfat
2 Tbls heavy cream
8 oz cream cheese, fat-free and softened
1 C sour cream, non-fat
salt and pepper to taste

Steam cauliflower until tender. Cool slightly and press between paper towels to remove all water. Puree cauliflower with butter and cream.

In a separate bowl, cream together cream cheese and sour cream. Add pureed cauliflower and mix well. Season to taste and serve.
