This salad is loaded with fresh ingredients and tossed with an incredible homemade dressing
1/3 C parsley, fresh, chopped 3 Tbls red wine vinegar 1 Tbls lemon juice, fresh 1 Tbls Dijon mustard 1 Tbls olive oil, extra virgin ½ tsp salt ¼ tsp black pepper 1 Lrg garlic clove, minced
1 lb red potato, small sizes and scrubbed 1 tsp salt ½ lb green beans, fresh, bite-size pieces 2 C chicken breasts, cooked 2 Tbls red onions, chopped 1-10 oz pkg salad greens
Combine first 8 ingredients; stir well with a whisk. Place in a labeled container and store in the refrigerator. Place potatoes in a saucepan; cover with water. Add 1 teaspoon salt to pan; bring to a boil. Reduce heat and simmer 10 minutes or until almost tender. Add beans and cook additional 4 minutes, or until beans are crisp-tender. Drain. Rinse with cold water; drain again. Quarter potatoes; place potatoes, beans, chicken and onion in a large bowl. Wash salad greens and combine with potatoes, beans, chicken, onion and greens in a large bowl. Drizzle with dressing; toss to coat. Serve immediately.
