A deliciously light salad with chunks of chicken breast, strips of red peppers and fresh lime dressing
1 lb skinless chicken breast, cooked & cubed 1 lrg red bell pepper, julienned ½ C green onion, sliced ½ C celery, sliced diagonally 2 tsp lime zest ½ C lime juice, fresh (approx 2-3 large limes) 1 tsp cumin salt, to taste ½ C olive oil, extra virgin ½ Romaine lettuce head, washed & cut 1/3 C peanuts, dry roasted & chopped
Prepare chicken, red bell pepper, green onions and celery.
Blend together lime zest, lime juice, cumin, salt and olive oil.
Lightly toss together chicken, vegetables and dressing. Cover and marinate in the refrigerator for 1 hour, but not longer than 3 hours.
Arrange lettuce on chilled plates. Top with dressed chicken and vegetables. Sprinkle with peanuts before serving.
