Butter carrots flavored with Kentucky bourbon
10 Tbls butter, unsalted 10 med carrots, peeled & sliced into thin rounds 2 med onions, thinly sliced 4 Tbls bourbon whiskey 2 tsp brown sugar salt & pepper, to taste
Melt butter in heavy large skillet over medium-low heat. Add carrots and onion; cook 5 minutes, stirring frequently. Mix in bourbon, brown sugar, salt and pepper to taste. Add more brown sugar if desired. Cover and cook until carrots are just tender, stirring occasionally, about 5 minutes.
