Asparagus Salad with Beans & Feta 3 Months, 1 Week ago  
A delicious Springtime salad with hints Summertime flavors!

3 C asparagus; 1-inch diagonally cut
1-14 ½ oz Cannellini beans (or other white beans); rinsed and drained
½ C radish; thinly sliced
½ C Feta cheese; (2 ounces) crumbled
2 Tbls green onion; thinly sliced
2 tsp lemon juice; fresh squeezed
1 tsp mint leaves; chopped
1 tsp extra virgin olive oil
¼ tsp salt
1/8 tsp black pepper

Steam the asparagus, covered, 2 minutes or until crisp-tender. Rinse asparagus with cold water, and drain. Combine asparagus and next 4 ingredients (asparagus through onions) in a large bowl.

Combine the juice and remaining ingredients in a small bowl; stir well with a whisk. Pour over asparagus mixture; toss gently to coat. Enjoy at room temperature or chilled.

Serves: 4
