Just top it with cheddar cheese and you are ready for a Fiesta!
Taco Soup (serves 8) 1 lb ground beef, lean 1 - 15 oz can black eye peas 1 - 15 oz can black beans 1 - 15 oz can chilil beans with gravy 1 - 14 oz can stewed tomatoes, Mexican _style_ 1 - 11 oz can corn, Mexican _style_ 1 pkg taco seasoning
Brown beef and drain fat. Put beef in a crock-pot; add undrained beans, tomatoes and corn. Stir in taco seasoning.
Cook at low for 6-8 hours.
Serve with sour cream, salsa and tortilla chips.
Healthy Tip - use extra lean beef or venison to lower fat content. To lower sodium, look for no-salt beans, tomatoes and corn.
