Make this comfort food in a half-hour with the help of the microwave!
Easy Scalloped Potatoes with Ham 3 Tbls butter 2 Tbls flour 1 tsp salt 1/4 tsp black pepper 2 C milk, low-fat 3-1/2 to 4 C potatoes, peeled & thinly sliced (about 4 medium) 2 Tbls onion, minced 2 C ham, chopped
In a large microwave-safe bowl, heat butter until melted. Blend in flour, salt and black pepper; whisk in milk. Heat at full-power for 8 to 10 minutes, stirring after 4 minutes. (Make sure to use a large bowl, the sauce gets very bubbly.)
Lightly coat 2-quart casserole dish with cooking spray. _layer_ half of the potatoes, onions and chopped ham; pour half the sauce over the top and repeat. Cover and microwave at full-power for 17 to 19 minutes. Remove from microwave, uncover and let rest for 5 minutes before serving.
