Cranberry Pineapple Relish 1 Year, 1 Month ago  
Someone made this contribution to our family Thanksgiving Dinner. It tastes great with tortilla chips and even better on turkey breast! The jalapeno gives it just a bit of zip; you can adjust that by using a small or large jalapeno pepper.

Cranberry Pineapple Relish

1 C cranberries, fresh
1/4 C brown sugar, firmly packed
1 C pineapple, fresh & coarsely chopped
3 Tbls red onion, finely diced
1 Tbls jalapeno, minced
1/4 C lime juice, fresh (2-3 limes)
salt and pepper to taste
1/4 C cilantro, coursely chopped

In a hot skillet combine cranberries and brown sugar; cook until berries start to pop. Add pineapple, red onion, jalapeno and lime juice; heat thoroughly, adding tablespoons of water if sauce gets too dry. Season with salt and pepper to taste.

Before serving, stir in cilantro. Can be served at room temperature or cold.
