Just because you are away from your kitchen it doesn't mean that you have to eat hot dogs, hamburgers and brats during your entire camping experience. Many delicious foods can be prepared, some even ahead of time, and enjoyed around the fire.

Fruits, vegetable sticks, sandwiches and cookies are simple enough, and they make for a good snack. When preparing sandwiches before you leave home remember these simple tips to prevent the bread from getting soggy: create a seal by lightly spreading butter on the bread; put the condiments on top of the lunchmeat and cover that with your cheese slices; and if you are adding lettuce or tomatoes, place these too between the meat and cheese.

Chili, stews and spaghetti can be cooked ahead of time and reheated on a camping stove. Meats and chicken breast can be packaged in Ziplock bags with marinade to grill whole or skewered with vegetables. Foil packages can be assembled before camping. All of these items can also be frozen before packing them into the cooler; they will last longer that way and help to keep the other foods cold. But always remember to use proper thawing procedures, letting your meals thaw in the "refrigerator" cooler. Never let food sit out on the picnic table to thaw!

Finally, keep the cooking utensils, dinnerware, dishtowels and hot pads in its own container. Don't pack them in the same box as the bug spray. And because your cooking equipment is limited, remember to bring some disinfectant to prevent cross-contamination especially on knives that are used for both cutting raw meat and other food items. A spray bottle filled with a 10:1 ratio of water and bleach works well for this.
