White Ham 'n Bean Soup 11 Months, 2 Weeks ago  
A nice change from the traditional ham & bean soup.

2 – 15oz cans Great Northern beans
1 small onion, chopped
2 Tbls olive oil, extra virgin
2-1/4 C water
1-1/2 C ham; cooked & lean
½ tsp salt
¼ tsp white pepper
1 bay leaf

Rinse and drain beans; mash one can of beans, set aside. In a large saucepan, sauté onion in olive oil. Stir in water, ham, seasonings and beans (whole and mashed); cook over medium heat until heated throughout. Remove bay leaf and serve.

Serves 4
