Fresh fish in a delightful coating of Parmesan cheese and Italian seasoning
1 med lemon 2 Tbls butter, softened 3/8 C Parmesan cheese, grated 1/8 C bread crumbs, dry 1/8 tsp salt ¼ tsp Italian seasoning ¾ lb fresh fish 1 lrg egg white
Zest lemon and then juice; mix zest and juice into softened butter. Mix together Parmesan cheese, bread crumbs, salt and Italian seasoning. Pour into large plate. Wash and dry fish thoroughly with paper towel. In a bowl, whip egg white until frothy. Immediately dip dry fish in egg white and then coat with Parmesan-herb breading. Place fish in a baking pan lightly coated with cooking spray.
Bake, uncovered, in a preheated 425-degree oven for approximately 12 minutes per inch of thickness at the thickest part of the fish. Be careful to not over cook the fish.
