Oven roasted lean pork chops with fresh garlic, onions, red potatoes and baby carrots
¾ tsp Italian seasoning ½ tsp salt ¼ tsp pepper 8 sm red potatoes, unpeeled and quartered (about 1 pound) 2 C baby carrots 1 med onion, cut into 8 wedges 1 lrg garlic clove, finely chopped 1 Tbls olive oil, extra virgin 4-4oz pork loin chops, boneless and trimmed Preheat oven to 450-degrees. Lightly coat at 15x10x1-inch pan with cooking spray. In a small bowl, mix together seasonings. In a large bowl, mix potatoes, carrots, onion and garlic. Sprinkle with oil and half of the seasonings mixture; toss to coat evenly. Place in the center of the pan. Bake 20 minutes; stir vegetables. Sprinkle remaining seasonings mixture over pork chops. Place chops around the vegetables. Bake 15-20 minutes or until the pork is no longer pink and a meat thermometer inserted in the center reads 160-degrees, and vegetables are tender. Serves 4
