In most cases, canned beans are available to use for your recipes. However, preparing dried beans is really not difficult and there are two methods you can use, soaking and cooking.
To soften beans by soaking, first rinse and pick through them for any tiny stones that might be present. Then place the beans in a large bowl and cover with water at a 6:1 ratio; that is six cups of water for every one cup of dried beans. Dehydrated beans soak up a lot of water. Let it stand overnight, then drain and rinse the beans again (this washes away the starch-like compounds that can cause flatulence later). That’s it, you’re done and they are ready to cook.
In the cooking method, rinse and pick through the beans to remove any tiny stones. Place the beans in a large saucepan and cover by at least 1 inch with cold water. Bring to a boil, reduce heat and simmer for approximately 45 minutes, or until the beans are tender. DO NOT add salt to the water as this may stop the softening process. If the water level drops below the beans, simply add more to cover. While the beans simmer, skim off any residue that may float to the surface. Drain and rinse again before using.
