How to Blanch 10 Months ago  
Blanching is a technique used to keep vegetables crisp and tender; it preserves the texture, color and flavor – a great way to enjoy your garden’s bounty. It is a very simple process that can be accomplished in a few steps:

1. Bring a large pot of water to a rapid boil
2. While the water is heating, fill a large bowl or a clean kitchen sink with cold water and ice cubes
3. When the water is boiling and the ice-bath is ready, trim the vegetables to the desired size
4. Add the vegetables to the boiling water in batches small enough that the water doesn’t lose it’s boil
5. Boil the vegetables only long enough until they are barely cooked and are still tender; this should only be a few minutes
6. Remove the vegetables as fast as you can and submerge them in the ice-bath
7. Remove them from the ice-bath when they are no longer warm; usually a few minutes

The vegetables are now ready for you to package and freeze to eat later. Or you can enjoy them immediately by using any cooking method you wish, like sautéing or grilling.
