Substitution for Apple Cider 11 Months, 2 Weeks ago
Husband wants dessert. Decided maybe I would make an apple strudel he likes. Recipe calls for apple cider. No apple juice in house either ~ too snowy & cold to go to store. Any ideas for a substitute?

Or should I just tell him to forget it & I'll fix the caramel bars I like instead?

Apple juice and apple cider are really the same thing. The differences in the name are generally a regional thing, some places calling it "apple juice" while others say "cider". In my eyes, apple juice is pasteurized and clear, cider is not pasteurized and is cloudy.

Use unsweetened apple juice as a substitute for the apple cider, in equal amounts. If that is still a problem and the recipe calls for just a bit of cider, I would try unsweetened white grape juice or apple schnapps or any other mild flavored liqueur. Who knows, you just might end up with a new apple strudel that you like even better!

Finally if none of those options work, then I guess I would tell your husband that you will make it the strudel some other time and go ahead make the bars!
