Remember that 15 pound turkey I cooked up? Well, I thought I'd tell you what I did with all the leftovers... - I cooked down the carcass and made 8 cups of Turkey Stock for the freezer; most was divided into 2-cup portions and the rest I poured into ice-cube trays to use for steaming vegetables.
- I found a wonderful recipe for Chicken Barley Chili that made 11 servings. I substituted with the turkey white meat; three of us had it for dinner that night, then I had a couple lunches. The rest was portioned-out for more lunches and put into the freezer.
- My daughter made a big pan of Turkey Enchiladas for four of us one night. We even had enough for a couple lunches.
- A few Turkey Sandwiches were had.
- The last of the meat was diced up and packaged for the freezer in 2 two-cup portions. I'll use them later for making quick dinners.
All told and including the original family Turkey Dinner for four, this turkey gave us about 10 meals for 4 people! Most of it is now in the freezer so that I don't have to worry later.
