All the kids were home for dinner last night. Now that my husband and I are "empty-nesters", it's a big deal when we have our children home. I wanted to make it especially nice because everyone was home instead of the usual one here and another one there. So I took the biggest turkey out of our freezer and planned a really huge meal. I must confess though, I had an ulterior motive for cooking that 15-pound turkey - LEFTOVERS! Most people grumble when they hear that word, dreading the thought of "extras", but I love it! To me, leftovers means less cooking or at least, less worry about what to make for dinner. Last night we had our mini-Thanksgiving feast; tomorrow I'll take the carcass and cook it down, taking more meat off the bones and making turkey broth. The calendar says that the 20th is the First Day of Spring, but there's still plenty of snow on the ground; so the broth will be used to make soup and some will be frozen in ice-cube trays for a quick vegetable seasoning. With the meat I'll make some turkey salad for lunch, Turkey Tetrazzini, maybe a turkey lasagna with a Parmesan white sauce or perhaps even have Turkey Omelets for breakfast with sauteed onions and red peppers. There are so many possibilities and even better yet, most of the dishes can be frozen so that later on I can just grab dinner from the freezer! |
