| A New Year, A New Start |

Happy New Year everyone! It's going to be a wonderful year! I'm starting over today. You know that I've had to make some dietary changes because of my high cholesterol and I was doing really well...until Christmas and New Year's. I had managed to increase my daily fiber to 35-40 grams a day, which was not as difficult as I had first imagined; but then came the Shrimp Scampi and rib-eye steaks and buttered veggies and mashed potatoes and cookies. It was much more enjoyable to be naughty than to stick to my high-fiber diet. So today I'm starting over; I am back to watching my fiber intake. This morning I'm having a breakfast of steel-cut oats, flax seed and raisins. Later I'll have some fruit salad (apples, pears, oranges & grapefruit mixed with yogurt) for a snack. Lunch will be a big green salad with chunks of grilled tuna, radish slices, toasted almonds and homemade low-fat dressing with a few Triscuit Thin Crips. A large apple will be my afternoon snack. That will bring me to about 30 grams of fiber and I haven't even planned dinner yet. I don't know yet if any of this is having any effect on my cholesterol, but I have lost about 5 pounds and I'm always full! Maybe now that I'm starting over I will lose even more weight. So here's to the new year and to starting over...may you have a success in whatever 2008 brings! |
